Aloo Mutter
Aloo Mutter (or 'Matar') is a vegetable curry from North India. "Aloo" means potato and "Matar" means peas; it is really simple to prepare and uses only easily-obtainable ingredients.
You can eat it as a side dish or serve with chapati, roti, paratha or naan.
Ingredients
2 peeled and cubed potatoes 1 cup frozen peas 1 finely sliced onion 1 tsp cumin seeds ½ tsp turmeric 2 tsp cayenne ½ tsp cumin ½ tsp coriander 1 tsp garam masala 1 cup water ½ cup soya milk 2 Tbsp oil Salt to taste
Cooking Instructions
- Heat the oil in a wide-based pan. Toss the cumin seeds in the oil for a few seconds, and then add the onion and fry for 2 minutes. Add the rest of the spices and mix them well.
- Add the potato and peas. Mix well to coat them and then turn down the heat, put on the lid and allow to cook, stirring frequently. Add the water. When the vegetables are cooked to your liking add the soya milk and dish out.
- Garnish with some chopped coriander.
- Serves with flat bread or biryani rice.
