Baked Green Peppers
Baked Green Pepper is a baked tomato casserole dish combining bell peppers stuffed with a coconut rice mixture, embedded and surrounded by a crispy potato pancake.
Ingredients
Grated potatoes: 1 or 2 grated potatoes 1 grated onion 2 tsp egg replacer ½ cup flour Stuffed peppers: 1 halved whole pepper Boiled rice ½ cup coconut milk 4 halved cherry tomatoes ¼ cup onions ¼ cup nuts (pine nuts, almonds or cashews) 1 tsp tomato ketchup/puree ½ minced chilli pepper 2 chopped fresh leaves basil Pinch of saffron Salt & pepper to taste Olive oil
Cooking Instructions
- Mix all the stuffed pepper ingredients together except for the green pepper, then stuff the mixture into the green pepper halfs.
- Lightly oil a shallow baking tray with olive oil.
- Mix the grated potato ingredients together and spread the mixture on a baking tray, placing the stuffed peppers in the middle.
- Bake at 180°C/350F for 30 to 40 minutes until the potato is nicely crisped.
