A very tasty and easy recipe for a vegan banana loaf.
1 cup wholeweat flour
1 cup all purpose flour
½ cup brown sugar
¾ tsp baking soda
¾ tsp salt
¾ tsp cinnamon
½ cup almond or soya milk
1 tsp apple cider vinegar (to help it rise)
4 mashed ripe bananas
¼ cup canola oil (replaces the egg, or you can make a flax 'egg' by blending 1 Tbsp flaxseeds in water, if you don't want the oil)
¼ cup maple syrup (the original recipe says ½ cup refined white sugar)
1 tsp vanilla extract
- Preheat oven to 180°C. Sift flour baking soda cinnamon & salt in a bowl.
- Whisk milk, vinegar and let stand for 2 minutes.
- Add banana, oil, maple syrup, and vanilla extract, whisking until well combined. Then add the dry ingredients to the wet ingredients until combined, but don't over mix it.
- Put in the oven and bake for an hour.
