Vegan Basil Pesto
Basil pesto is super easy to make and if you grow your own basil your most important ingredient is easily at hand. The other ingredients might be initially expensive but on bulk it does work out cheaper.
Pesto elevates any meal to gourmet status, even a humble sandwich, and it's something that no kitchen should be without. Note that pesto is always made to taste so adjust the ingredients and quantity to your own taste. Pine nuts are normally used but if you really can't find any use walnuts instead.
Ingredients
2 cups basil leaves 2 cloves garlic ½ cup extra virgin olive oil 1/3 cup pine nuts Salt and pepper to taste
Cooking Instructions
- Combine the basil with the pine nuts in a food processor and pulse a few times. Add the garlic and then pulse a few times more.
- Slowly add the olive oil in a constant stream, stopping to scrape the sides with a spatula. Pulse again until finely blended.
- Add salt and pepper to taste and spoon into a glass jar.
- Serve with pasta, on baked potatoes or spread over bread.
