Bean Tacos
A taco is a Mexican dish that uses a corn or wheat tortilla folded or wrapped around a filling, such as beans or vegetables. Tacos are normally eaten by hand and served with salsa, guacamole, cilantro, tomatoes, onions and lettuce.
Although in traditional Mexican cuisine tacos can be soft tortilla wrappers, this recipe uses v-shaped hard taco shells that were made popular in North America in the 20th century.
Ingredients
Olive oil 1 chopped onion 2 cloves crushed garlic 1 packet of taco seasoning 1 tsp paprika 1 tsp chilli flakes or fresh chilli 2 diced peppers 4 chopped baby marrows 2 cans drained beans 1 can tomatoes Salt and pepper Taco shells
Cooking Instructions
- Heat the oil in a frying pan and fry the onion and garlic.
- Add the remaining ingredients and simmer until tender and the sauce has reduced. Season to taste.
- Heat the taco shells and serve with coriander, guacamole and salsa.
