Cashew Sour Cream
Sour cream is used primarily in the cuisines of Europe and North & Central America, particularly as a condiment. It is a popular choice as a topping for jacket (baked) potatoes, burritos and nachos. It is also commonly used in dips.
1 cup raw cashews (soaked overnight for best results)
¼ cup fresh cold water
1–2 tsp apple cider vinegar
1-2 Tbsp fresh lemon juice
Salt to taste
- Drain and rinse the soaked cashews.
- Place in a blender with fresh water, 1 teaspoon of vinegar and a small amount of lemon juice. Blend well.
- Check for seasoning and tartness; it's much easier to add in more vinegar and or lemon juice than take it out!
- Please use fresh lemon juice, not bottled.
