Chocolate Cake With Icing

This delicious cake is quick and simple to make. To convert to cupcakes, simply pour the mixture into a cupcake tray.


1¼ cups flour
1 cup sugar
1⅓ cup cocoa powder or carob powder
1 tsp baking soda
1½ tsp salt
1 cup warm water
1 tsp vanilla extract
1⅓ cup vegetable oil
1 tsp apple cider vinegar

1½ cup sugar
4 Tbsp margarine
2 Tbsp soy milk
2 Tbsp unsweetened cocoa powder
2 tsp vanilla extract

Cooking Instructions

  • Preheat the oven to 180°C.
  • Thoroughly mix the flour, sugar, cocoa or carob, baking soda and salt in a cake pan. Add the water, vanilla, oil, and vinegar, and mix again.
  • Place in an oven and bake for 30 minute or until a toothpick can come out of it clean.
  • For the icing, bring the sugar, margarine, soy milk and cocoa or carob to a boil in a small pan. Stir frequently, then reduce heat to a simmer for 2 minutes, stirring constantly.
  • Add the vanilla, stir and immediately pour onto the cake. Add your favourite sprinkles (optional). Let the cake cool for an 1 hour and enjoy!
Serves 8 people
