Cider Mashed Sweet Potato

Cider flavoured mashed sweet potatoes are a popular accompaniment to Christmas meals in North America.


5 scrubbed and unpeeled large sweet potatoes
150 ml apple cider
55g vegan margarine
2 Tbsp light brown sugar
½ tsp salt
Chopped and lightly toasted pecan nuts or thinly sliced pineapple rings, for garnishing

Cooking Instructions

  • Boil the cider in a small saucepan over high heat until reduced by half, about 7 minutes. Set aside.
  • Bring a large pot of lightly salted water to the boil. Add the sweet potatoes and cook until tender, about 30-40 minutes. Drain well.
  • Peel the hot sweet potatoes, using a kitchen towel to protect your hands. Return them to the warm pot, add the cider, margarine, brown sugar and salt, and mash until well blended.
  • Garnish and serve hot.
Serves 8 people
