Date Loaf

Dates have been staple food in the Middle East for thousands of years. They are the fruit of the date palm, thought to have originated around the Persian Gulf area. Dates are high in simple sugars, dietary fibre, tannins, anti-oxidants, iron, potassium, copper, vitamin A and B6.

This vegan date loaf recipe is embarrasingly simple and delicious!


1 cup chopped fresh dates
1 cup raw sugar
1 cup boiling water
60g Cardin margarine
1¾ cup self-raising flour
1 tsp bicarbonate of soda
2 tsp vanilla extract

Cooking Instructions

  • Put the above in a bowl and stir until the margarine and sugar have melted.
  • Add the self-raising flour and mix, add the bicarbonate of soda and mix again. Finally add the vanilla extract and stir.
  • Use a small square baling tin, a loaf tin or a deep small round tin. Bake at 180°C for about 50 minutes.
  • Tastes really good plain, or serve with a favourite spread.
Serves 6 people
