Egg-free Baobab Mayonnaise

This super-quick (yes, really, 5 minutes!) egg-free recipe for home-made mayonnaise is a real treat! The joy of it is that you have plenty of options for variations. The plain recipe is flavoured just with baobab powder and garlic and is delicious all on its own, but this recipe is also versatile. Try it with your favourite combination of green herbs (dill, thyme, chives, rosemary, basil, coriander, etc.) or give it a kick with some chilli, and you have the perfect mayo for sandwiches, burgers, home-made chunky sweet potato chips or salad. The possibilities are endless!

Ingredients

Egg-free Baobab Mayonnaise by Candice Douglas, Eco Products ¾ cup oil (sunflower or olive oil)
2 Tbsp vinegar (white wine vinegar or apple cider vinegar)
2 heaped Tbsp Baobab powder
2 Tbsp syrup
1 small garlic clove
1 tsp salt (try Oryx Desert Salt)
½ cup water

Cooking Instructions

  • Place all the ingredients except the water into a blender (if you're adding herbs or spices, these go into the blender now too).
  • Blend on high for a minute, stopping once or twice to scrape down the sides and make sure everything is well combined.
  • Add the water and blend on high; it should thicken quite quickly.
  • Bottle and refrigerate. Lasts for up to 2 weeks in the refrigerator.
Serves 6 people
