Green Beans With Cranberry
Green beans are also known as string beans. They are used in cooking in most places in the world, especially Asia. They are high in fibre, protein, vitamins C, K, and manganese. Cranberries are also high in manganese, fibre and vitamin C. Being high in polyphenols such as proanthocyanidins and flavonols, it is thought that cranberries might also help combat cancer.
230g green beans, trimmed and cut diagonally
2 Tbsp vegan margarine
120g dried cranberries
1 clove minced garlic
2 Tbsp chopped fresh parsley
Sea salt and ground pepper, to taste
- Put the green beans in a pot of boiling salted water and cook for 3-4 minutes.
- Drain in a colander and hold under running cold water to halt the cokking process. Blot with a paper towel to remove the surface water.
- Place in a dry frying pan and heat over a medium heat until any remaining moisture evaporates. Stir in the margarine, cranberries, garlic, parsley, salt and pepper, tossing to coat the beans well.
- Cook until heated through and serve as part of your meal.
