Hot and Sour Soup

This soup has a distinct Asian flavour. Everyone who's tried it loved it. It serves about 3 people as a meal or more as a starter. You can use it as a starter to a Chinese or Thai meal. You can also add Chinese vegetables very successfully if you prefer.

Ingredients

Hot and Sour vegan soup by Angela Tuson300 ml water
2 chopped up, medium onions
2 minced cloves garlic
2 stalks of lemon grass, chopped along the stalk to make small roundlets
½ tsp chili powder or fresh chili to taste
1½ cups rinsed dried red lentils
½ tsp paprika
1 tin (about 280-300 ml) coconut milk
1 juice of lemon
½ cup chopped coriander
Vegetable or olive oil

Cooking Instructions

  • Sauté the onions, garlic and lemon grass until onions are see-through.
  • Add the other ingredients except for the lemon juice and coriander.
  • Simmer until the lentils are soft; about 15-20 minutes.
  • Add the lemon juice and coriander.
Serves 3 people
