Huevos Rancheros

Huevos Rancheros is a classic Mexican breakfast dish popular throughout much of the Americas. It incorporates several of the foods that are so strongly associated with Mexican cuisine. The basic dish consists of scrambled or fried eggs (this recipe uses scrambled tofu instead) served upon lightly fried corn tortillas, topped with a tomato-chili sauce. Refried beans, slices of avocado, or guacamole often accompany the dish.

Ingredients

Vegan Huevos RancherosFried or grilled vegan sausage, sliced
2 tortillas

For the scrambled tofu:
2 Tbsp olive or canola oil
1 chopped yellow onion
1 chopped red pepper
5 chopped button mushrooms
1 crumbled pack firm tofu
½ tsp coriander
½ tsp cumin
1 tsp cayenne
½ tsp turmeric
Salt and pepper to taste

For the pico de gallo (salsa):
2 cup tomatoes
¼ cup chopped onion
1 de-seeded and chopped jalapeños
1 clove chopped garlic
Juice of 1 lemon
Handful chopped coriander
Salt and pepper to taste

For the guacamole:
1 large avocado
½ diced large tomato
¼ diced white onion
1 diced serrano pepper (add as much pepper depending on how much heat you want)
Juice of 1 lemon
½ cup finely chopped cilantro
Salt and pepper to taste

For the refried beans:
2 cups tinned pinto beans

Cooking Instructions

For the scrambled tofu:
  • Heat the oil on a medium-high heat in a large pan.
  • After about a minute, toss in the onions and cook until they become soft and transparent, stirring often. Then put in the red pepper and mushrooms, and cook until these become soft (keep stirring occasionally).
  • When the peppers and mushrooms are tender, add the crumbled tofu. Stir and add the coriander, cumin, turmeric, cayenne, salt and pepper. Stir all of these in, just until the tofu is heated. Remove the pan from the heat.
For the pico de gallo:
  • Mix all the ingredients together.
For the guacamole:
  • Spoon out the avocado flesh into a bowl and mash with a fork until all the lumps are out.
  • Mix in the rest of the ingredients and add the salt and pepper to taste.
For the refried beans:
  • Put the beans in a small pot, heat and mash with potato masher.
Assembling the dish:
  • Place each tortilla on serving plates, top with scrambled tofu, sliced sausage, refried beans, pico de gallo, and guacamole.
  • Garnish with ground black pepper and chopped coriander.
Serves 2 people
