Indian Tomato Soup

This is a really easy but tasty Indian soup from Kerala, in the south. The coconut milk makes it quite sweet, the spices balance that out, the effect is a moorish flavoursome soup. Enjoy!


1 large roughly chopped onion
2 tins of chopped tomatoes
1 tin of coconut milk
2 tsp mustard seeds
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground ginger
½ tsp chilli
½ tsp ground cardamom
1 Tbsp sugar
1 Tbsp of white vinegar
1 vegetable stock cube
A small handful of curry leaves if available
Salt and pepper

Cooking Instructions

  • Fry the onion on a low heat for 5-10 minutes, add the spices and seeds and fry for another 3 minutes.
  • Place in a blender with the tomatoes and blitz till smooth, or blitz in the pan with a hand blender.
  • Add all of the other ingredients and simmer on a medium heat for 20 minutes.
Serves 4 people
