Indian Yellow Rice
This biryani-style dish is a quintessential Indian food. You can make it as a side dish for your favourite Indian curry, such as bean or lentil, or simply eat it as a main course in its own right, together with popadums and mango or lime chutney (atchar).
Ingredients
1 cup rice 1 carrot ½ cup chopped green beans ½ sliced red pepper ½ cup chopped cauliflower 1 chopped onion 1 tsp tumeric 1 tsp curry powder 1 clove finely chopped garlic ½ chopped spring onion 1 tsp sugar Curry leaves Salt Sunflower oil Water
Cooking Instructions
- Boil the rice in water.
- Fry the garlic, curry powder and tumeric in sunflower oil. Add the rice, salt, sugar and vegetables. Mix and turn on a low heat until the vegetables are cooked.
- Garnish with spring onions.
Serves 2 people

This is one of my favourite recipes. It would be terrific if others could submit more Indian vegan recipes. Indian food is ideal for vegan cookery.
