Lentil Rice
Here's a rice side dish that's very easy to prepare. It's economic to buy and full of flavour, so it makes a great alternative to plain rice or other starch side dishes. It uses a simple presentation technique that makes it look so neat it wouldn't look out of place on Masterchef Goes Large.
Ingredients
½ cup rice ¼ cup lentils Raisins ½ tsp turmeric 1 tsp cajun spice 1 tsp tumeric
Cooking Instructions
- Cook the rice, lentils and a few raisins altogether in pot.
- Add Cajun spice (or more if prefer spicier) and turmeric.
- Cook until rice is soft (needs to be soft and sticky so it can be shaped).
- Fill a small bowl (sprayed with non-stick spray) with the rice mix and press it firmly down. Turn over bowl on plate.
- Garnish with parsley.
Serves 2 people
