Meat Free Chicken Karahi
Chicken karahi, also known as kadai chicken, is a popular Pakistani and North Indian dish distinguished for its spicy taste and use of capsicum pepper. Only one utensil is required to cook the dish - the karahi (wok).
1 box meat-free chicken-style strips
2 Tbsp ghee-substitute
4 Tbsp oil
2 large chopped onions
2 bay leaves
2 tsp fennel
2 cinnamon stick
4 tsp masala
1 red, yellow or green capsicum pepper
2 Tbsp non-dairy cream
Salt to taste
40 cashew nuts
½ cup dhania/coriander
- Heat the ghee-substitute and oil in a karahi (wok). Add the chicken-style strips and cook until lightly browned, then remove and set aside.
- Fry the onions until lightly brown, add the strips, masala, cloves, bay leaves, fennel and cinnamon. Cook on a low heat for 10-15 minutes.
- Grind the dhania and cashew nuts, add to the mixture and cook for a further 5 minutes.
- Dribble non-dairy cream over and add capsicum pepper to garnish before serving.
