Mushroom with Chilli and Thai Basil Leaves
Phad kraprao hed is another of the exceedingly popular Thai stir-fried dishes. It's main ingredients are mushrooms, Thai holy basil leaves ... and, of course, chillies. If you try this dish in Thailand, do take care - it can sometimes be exceptionally spicy.
Feel free to experiment with this dish. It can just as easily be made with soy mince or firm tofu as well as, or instead of, muchrooms.
Ingredients
2 cups mushrooms (or try dried mushrooms for a chewy texture) 7 chopped yellow chillies, 2 red spur chillies, sliced diagonally 10 cloves garlic ½ cup holy basil 1 tsp salt ¼ cup vegetable oil 1 Tbsp light soy sauce 1 tsp sugar 3 Tbsp water
Cooking Instructions
- Pound the yellow chillies, garlic and salt in a mortar until ground and mixed thoroughly.
- Heat the oil in a wok. When hot, stir fry the chilli-garlic mixture until fragrant. Add the mushrooms, stir and then add the water and cook until the mushrooms are tender .
- Add the spur chillies and basil. Season with soy sauce and sugar, and stir well.
- Serve over or to the side of a bed of rice, garnished with a few lettuce leaves.
