Norwegian Apple Cake
A classic Norwegian cake recipe. Scandinavian chefs often bake desserts with lots of fruit.
¾ cup Cardin margarine
1 cup raw sugar
2 Orgran egg replacers made up (Dischem, Pick n Pay etc.)
1½ cups stone ground cake flour
1 heaped tsp baking powder
½ cup soy/rice/nut milk
1 tsp Woolworths alcohol free caramel essence (flavour is excellent)
½ cup flaked almonds
1 Tbsp mild (rice) vinegar
3 Granny Smith apples, peeled, cored and thinly sliced
1 tsp cinnamon
1 Tbsp sugar
- Cream the sugar with the margarine and egg replacer until light, fluffy. Add the balance of ingredients up to and including vinegar and mix well, but not for too long (or it goes tough).
- Put the mixture into a sprayed and cooked pie dish. Put apple slices on top of the cake ... use more than you think you need. Mix the sugar with cinnamon and sprinkle over the apples.
- Bake for about 60 minutes in an oven at 180°C, until well risen and golden.
