Bhindi Bhaji
Bhindi Bhajis are okra patties. Okra is used widely in Indian cuisine. Although it is quite high in disolved sugars, 'Ladies Fingers' are a very good source of fibre, vitamins A, C, K and B6, calcium, magnesium and Manganese, a good source of protein, riboflavin, niacin, phosphorus, potassium, zinc and copper, as well as being low in saturated fat and sodium, and very low in cholesterol.
Bhindi Bhajis are good as a shared starter served with mango chutney or atchar, or as a side dish.
Ingredients
2 cups okra 1 large onion 4 cloves garlic 1 cup fresh parsley 1 tsp cumin ¾ cup wholewheat flour 1 tsp salt 2 fresh chillies 1 cup water Olive oil
Cooking Instructions
- Blend 1 cup of okra with all the rest of ingredients in a blender, add the additional cup of okra and mix well.
- Form the patties and fry them in a little olive oil.
Serves 4 people
