Pieter's Nut Pie
A vegan pie recipe and the most amazing nutty affair. Made from mixed nuts.
2 cups of mixed nuts and seeds, chopped
1 Large chopped onion
1 punnet/200g chopped mushrooms
2 stalks chopped celery
3 minced garlic cloves
2 Tbsp of olive oil
2 Tbsp of chopped fresh herbs
3 Tbsp good quality tomato paste
3 Tbsp of ground flax seed mixed with 6 Tbsp hot water
1 cup of organic rolled oats (gluten-free)
1 can of drained lentils
1 cup of coconut cream
2 Tbsp lemon juice
1½ Tbsp Ina Paarman beef stock (it is vegan)
- Sauté the onion, garlic, celery and mushrooms until translucent in the olive oil.
- Add to rest of the ingredients and mix well. Place in a loaf pan and bake for 30 minutes at 180°C.
- It is usual to top the loaf with a good quality tomato paste. About ¾ of a cupful mixed with 2 tablespoons of maple syrup and top it about 10 minutes before the end of baking.
- This mixture makes a beautiful pie, just chill and cover with pastry.
