Raw Chocolate Delights
This simple vegan dessert requires no cooking and is made from dates and walnuts. Walnuts are native to southern Europe and are high in manganese and omega fatty acids. Dates originated around the Persian Gulf region and are high in fibre, potassium, copper and vitamin B6.
Ingredients
1 cup unsoaked walnuts 5 unsoaked, pitted Medjool dates 2 Tbsps cocoa powder 1 tsp coconut oil, liquid form 1 tsp vanilla extract ½ tsp almond extract ¼ tsp Himalayan salt
Cooking Instructions
- Process the walnuts and dates in a food processor until the mixture sticks together. Add the sea salt, vanilla extract and almond extract.
- Roll 8 small balls out of the mixture. Roll in the extra cocoa powder / finely ground nuts (hazelnut would be good) and serve.
