Raw Mulberry Cookies
Raw desserts that are low in fat are pretty difficult to find. Most contain high-fat ingredients like nuts. These cookies are nut-free and combine dates, mulberries and coconut. They will go easy on your waistline and complexion.
½ cup dried white mulberries
5 large medjool dates
2½ –3 Tbsp shredded coconut.
- Blend all the ingredients in a high-speed blender or food processor until you get a uniform dough.
- Scoop out about 1 tablespoon of the mixture, roll into a ball then flatten it into a cookie shape. Repeat this process 8 times to use up all the mxture.
- You can then store them in an air tight container in your refrigerator.
