Roasted New Potatoes

New potatoes are young, small and immature potatoes. They have thin skins which it is not necessary to peel. They are sweeter than mature potatoes because their sugar has not yet converted into starch.


2 Tbsp olive oil
8 new potatoes, washed and thoroughly dried
2 Tbsp olive oil
1 Tbsp fresh thyme leaves
Sea salt and freshly ground black pepper to taste

Cooking Instructions

  • Preheat the oven to 230°C. In a bowl, toss the new potatoes with the rest of the ingredients. Transfer to a baking pan.
  • Bake until crisp on the outside and tender on the inside, about 25 minutes. Serve warm.
Serves 2 people
