Smoky Tomato Vinaigrette

This recipe makes approximately 2 cups of vegan salad dressing.


Vegan Smoky Tomato Vinaigrette by Pieter Kotzé¾ cup olive oil
¼ cup apple cider vinegar
1-2 cloves garlic
3 large red firm ripe tomatoes
1½ tsp liquid smoke
1 Tbsp Dijon mustard
2 Tbsp fresh chopped basil
Salt and pepper, to taste

Cooking Instructions

  • Cut the tomatoes in half and scoop or squeeze out as many of the seeds as you can. Chop the tomatoes into smaller pieces.
  • Add all of the ingredients to your high-speed blender and blend until smooth and creamy.
  • Taste the dressing, season with salt and pepper, to taste.
Serves 4 people
