Spaghetti Aglio e Olio
Here's the simplest of Italian recipes - spaghetti aglio, olio e ... peperoncino (garlic, oil and chilli).
Fresh and easy with a hot touch, it takes less than 10 minutes to prepare. This dish is really fast food.
1 whole head (up to 10 cloves) finely chopped garlic
2 or 3 chopped red and green chillies
4 Tbsp extra virgin olive oil
- Boil the spaghetti in salted water until al dente (check the label for cooking time), then drain.
- In a shallow frying pan, add the extra virgin olive oil, garlic and, if you like spice, 2 or 3 red and green chillies (to your taste). Then cook on a warm heat only for the same length of time as you boil the spaghetti.
- Once the spaghetti is cooked, add it to the frying pan, mix and serve.
- Note: transfer the spaghetti directly from the water to the frying pan as this best maintains the taste and nutritional quality of the pasta.
