Spiced Vegetable Bake

A tasty treat of starchy vegetables and peppers spiced with Cajun and oven cooked in a cast iron pot. This tasty dish can be enjoyed as a side or simply as a substitute for starch to your main meal.

Ingredients

Fresh oven cooked vegetables¼ diced Hubbard squash
3 diced potatoes
½ sliced red pepper
½ sliced yellow pepper
½ sliced green pepper
½ sliced onion
3 spoons olive oil
The juice of ½ a lemon
4 Spoons sweet chilli sauce

Cooking Instructions

  • In a bowl, mix all the ingredients thoroughly and leave to marinade for 4 hours. Transfer the ingredients onto a cast iron pot.
  • Preheat the oven to 200 degrees Celsius. Close the cast iron pot and place into oven. Allow to cook for at least an hour or just until the vegetables are soft.
  • Check at regular intervals and turn with a fork.
  • Serve and enjoy.
Serves 4 people
