Tofu Chocolate Mousse
This makes a very rich dessert which can either be poured into a biscuit crust or flan base and topped with sliced fruit or served in wine glasses, or sundae bowls topped with some fruit and a shortbread stick. It is VERY rich!
275g non-dairy chocolate broken into small chunks
1 container Nature’s Choice tofu (cannot use normal tofu for this recipe as it will be grainy), well drained OR can use Mori-Nu tofu from Woolworths
3 Tbsp maple syrup
½ tsp good quality vanilla essence
Optional crust (use gluten-free crust if required)
Fruit (strawberries/kiwi/mandarin oranges etc.)
- Blend the tofu till very smooth.
- Melt the chocolate over a double boiler or in the microwave, being careful not to burn it.
- Add the maple syrup to the tofu and then add the vanilla and melted chocolate and blend or whip until creamy. Pour into glasses or flan base and place into the fridge to chill.
- Would suggest covering the tops with cling wrap while in the fridge.
