Tom Yam Soup
This is a hot and sour soup from central Thailand, and is one of the most popular of Thai dishes. In Thailand Tom Yam (Yum) is normally made with prawns, chicken or seafood, but works just as well with tofu instead. Milder versions of the dish can easily be made be reducing the amount of chilli added. Tom yam is normally served with a side portion of jasmine rice.
Ingredients
3 cups water ½ pack chopped tofu 4 slices galangal (or baby ginger) 1 small packet straw or oyster mushrooms 1 sliced medium onion 2 sliced tomatoes 2 chopped lemon grasses 3 sliced red chillies 2 freshly squeezed limes juice 3 torn kaffir lime leaves 1 Tbsp chopped coriander leaves 1 Tbsp chopped spring onions 2 tsp salt 1 Tbsp sugar
Cooking Instructions
- Boil the water in a large pan, add all the ingredients except for the coriander and spring onions, and bring back to boil.
- Cook for 10 minutes.
- Garnish with coriander and spring onions
