Tomato Soup
Tomato is one of the most popular soups among cultures of European descent. Tomatoes originate from South America and first made their way into popular use around the world following the Spanish colonisation of the Americas. They contain the carotene lycopene, one of the most powerful natural antioxidants. Lycopene has been found to help prevent some cancers such prostate and of the skin.
Ingredients
4 or 5 really ripe tomatoes Handful of sun dried tomatoes A red pepper (optional) 1 avocado pear for thickening the soup (If you don’t have an avocado pear you can use sesame seeds) Salt and pepper to taste
Cooking Instructions
- If you are making it in summertime you will 1 or 2 cups of cold filtered water, and if you making it in wintertime you will use 2 cups of almost boiling water and chilli powder to taste.
- Blend it all up in the blender and, 'voila', your soup is ready. Serve it with a handful of home grown sprouts and a few slices of avocado.
