Toni's Bean Burgers

This recipe is for vegan bean burger patties. Plenty of garlic, flax seeds and Cajun spices are used.

Ingredients

1 can of red kidney beans, rinsed, well drained until dry and mashed
1 can 4 bean mix, rinsed, well drained until dry and mashed
1 medium carrot, finely grated
I finely diced red pepper
1 large crushed clove garlic
½ cup ground raw sunflower seeds
3 Tbsp ground flax-seeds
¼ cup nutritional yeast flakes (not brewers yeast!)
1 tsp Himalayan salt
Freshly ground black pepper, a good few 'grindings'
1 tsp Italian herb mix
1 Tbsp finely chopped fresh parsley
2 generous tsp of your favourite Cajun spice mix
1 Tbsp of your fave oil (nut / olive /coconut etc.)

Cooking Instructions

  • Mix all the ingredients and form into 6 equal patties.
  • Pop into a fridge or freezer to firm up before cooking.
  • Shallow fry and then you can finish by baking in an oven to cook/warm through.
Serves 6 people
