Udo Pasta with Spinach & Avocado
This really might surprise you and is a must for the future.
150g washed spinach - quick boil, few seconds and drain
1 medium avocado
2 Tbsp chopped fresh basil
1/2 seeded and chopped chilli (not too potent)
1 Tbsp of pine kernels (optional)
2 cloves garlic, crushed
1 heaped tsp nut butter (could use macadamia)
6 cm stalk celery chopped
Sea salt and course black pepper
Juice of 1/2 lemon
- Blend everything together in the most awesome sauce.
- Don't use oil, since there is enough oil in the natural ingredients.
- Toss with your favourite pasta. You can add Violife shavings and/or dehydrated crumbed onions as a topping.
