Vegan Evaporated Milk

A slow cooker is a very useful accessory with grains and pulses in vegan cooking. Here we use it to create evaporated milk which you can then use it in all your favourite desserts calling for evaporated milk.

Ingredients

Vegan Evaporated Milk by Pieter Kotzé1-1/3 cups water
1 cup powdered milk (Earthworks Soya, or soya and almond milk powder work the best)

Cooking Instructions

  • Add the water and dry soy milk powder to the slow cooker. Stir well.
  • Cook on high for 1 1/2 hours. Do NOT cover because it has to cook down to become evaporated milk.
  • Pour in a measured cup to make sure you have the right measurement. Do this because some slow cookers might cook a little bit hotter. If it has evaporated too much you can add a little bit more water to get the measurement correct.
  • You should end up with a standard can of evaporated milk-about 360 ml. This can easily be doubled if you need more than one can.
