Vegan Muffins

Muffins are great at breakfast time, as a mid day snack, or when out and about on your travels. This recipe introduces a basic vegan muffin which you can use to create a variety of flavours such as berry, date or raisin.


1½ cups all-purpose flour
½ cup sugar
2 tsp baking powder
1 tsp salt
¾ cup soya/nut/oat/rice milk
¼ cup canola oil
1 cup fresh berries/chopped dates/dried cranberries/raisins

Cooking Instructions

  • Preheat your oven to 200°C. Spray the muffin tin with 'Spray and Cook' or grease.
  • Combine the flour, sugar, baking powder and salt. Stir in the liquids and fold in the fruit.
  • Pour into the prepared muffin tin and bake for 25 to 30 minutes.
Serves 4 people
