Muffins are great at breakfast time, as a mid day snack, or when out and about on your travels. This recipe introduces a basic vegan muffin which you can use to create a variety of flavours such as berry, date or raisin.
I made these today, instead of flour and baking powder i just used 1.5 cups of self raising flour.
I used mixed fruit and nut packet (raisins, goji berries, pumpkin seeds, peanuts and some other fruity and seedy bits, etc).
It made 6 semi large muffins. They are marvellous!!
