Vegetable Pastry Roll

This is a vegetarian (and vegan) pastry roll. Pastry rolls are very common in the cuisines of many Western countries and cn be served as an appetiser or as part of a main course meal. This one is made from lentil, apple, tomato and onion.


1 frozen Today puff pastry
1 pealed and chopped apple
1 chopped tomato
1 chopped onion
½ cup rice or cooked lentils
1 cup grated vegan "cheese"
Salt and pepper to taste
1 tsp dried parsley

Cooking Instructions

  • Mix all the ingredients together and spread over the rolled out pastry, leaving about 1 or 2 inches of pastry clear of the mixture around the edges.
  • Turn the short end of the pastry, top and bottom, in and then start rolling the length of pastry (like a Swiss roll) making sure the 'seam' is pinched together to prevent leakage.
  • Brush the top with a little soya milk, prick some holes in the pastry top and bake in an oven at 180°C for about 20 minutes, or until brown and cooked.
Serves 2 people
