Background on French Food
French recipes have developed a long way from their early forms such as banquet style game pies, mustard, wines and French cheeses; into one of the most highly refined cooking 'arts' in the world. France spawned 'Haute Cuisine' which are dishes that are characterised by elaborate preparation and careful presentation, and usually accompanied by fine wines. More recently 'Nouvelle Cuisine' has shifted the emphasis to lighter and more delicate dishes with increased emphasis on presentation a la Michelin.
French cuisine makes liberal use of herbs and creamy sauces. Vegetables and beans are widely used but are usually consumed alongside a wide variety of meats, including steak, beef, veal, game, bird, and even horse, snail and frogs. Vegans may struggle to find a French recipe that's suitable in the many restaurants, bistros, brasseries and cafés that adjoin the pavements. Walk down any village high street in France however, and you'll find a bakery, a pastry shop, wine and cheese shops, which perhaps shows that simple foods are still central to the palette of most French people.
It has been responsible for the creation of such world famous dishes and foods as quiches, baguettes, bisques, bouillabaisse, omelettes, soufflés, terrines and pâtés, bourguignon, ratatouille, ragouts, casseroles, confits, roux, innumerable sauces including béchamel, pepper & beurre blanc, coq au vin, Dijon mustard, croissants, mousse, éclairs, profiteroles and gateaus... among many, many others.
