Background on Mediterranean Food
21 countries and their many islands have a coastline on the Mediterranean Sea and it's the dishes from these nations that are classified as Mediterranean recipes. Along the north shores of the sea there are the famous Spanish, French, Italian, Greek and Turkish cuisines; along the southern coastline there are Moroccan, Egyptian and Lebanese cuisines.
Several of these countries have had politically powerful modern histories and so the influence of these recipes is far reaching. Many of the cuisines in 'The Med' are so popular that they earn there own sections in our directory.
Of course, being a sea, the Mediterranean diet includes lots of fresh seafood and fish. However, there are many vegetarian and vegan recipes from the Mediterranean due to the abundance and use of a wide variety of vegetables including artichokes, eggplants, tomatoes, onions and mushrooms. Pasta, rice, beans, peas, olives and herbs are also widely used. Typically, food is grilled, roasted, baked, sautéed or in the form of a salad dish. Olive oil is an ever present.
It's possible to find Mediterranean food all across the world these days. But there can be no better way to sample these fine meals than at sunset from a seaview restaurant on one of the many islands with a glass of fine wine from the region.
