Background on North African Food
North Africa lies on the southern shore of the Mediterranean Sea and the countries of Morocco, Algeria, Tunisia, Libya and Egypt form this regional cuisine. Dishes here have a long history of being strongly influenced by traders, travelers and invaders, including Arabs, Turks, Carthaginians, Berbers and Phoenicians.
Staple foods used in North African recipes include dates, almonds, olives, various vegetables, legumes and fruit. Herbs and spices are often used, especially peppermint, parsley, coriander, cumin, ginger, paprika, cinnamon and saffron. The people of the region are predominantly Muslim so pig products are generally not consumed.
Some popular vegetarian dishes and vegan foods associated with the region include Tajine (a slow-cooked stew), Harira (a type of soup), Shakshouka, Makroudh, Makboubeh, Ful Medames, Kushari, Falafel, Baba Ghannoush, Molokheyyah, Lentil soup, Couscous, Tehina, pasta and various flat breads.
