The black bean, a common name for Castanospermum australe, is a small, black variety of the common bean popularly used in Latin American cuisine. Black beans, like most other legumes, are rich in cholesterol-lowering fibre, which also prevents blood sugar levels from rising rapidly after dining, making these beans a good choice for diabetes sufferers.

Black beans are also a great source of high quality, virtually fat-free protein.

Butternut, a popular type squash, has slightly sweet, bright orange flesh and thick tan skin which is inedible. In addition to being a sweet, delicious treat, butternut is also a source of many important vitamins and minerals. The flesh of the squash contains potassium, manganese, magnesium and vitamin C. Butternut is also a good source of dietary fibre.

Although the squash is native to Mexico and the surrounding areas, the most popular butternut is the Waltham Butternut which was originally grown in Massachusetts, USA.

Chocolate Fudge Brownies

You'll love to make these for non-vegans. They're always amazed that something so seriously scrumptious can be egg-less and milk-less. Melt a bar of dark chocolate over the top for added richness when making them as a gift. Don't worry about how long they keep ... they tend to get eaten up quickly.

You can also use this recipe to make as a cake. Black Forest cakes are really very luxurious. Just bake this recipe in round tins (use 1½ times the amounts), trickle the cakes with kirschwasser and layer with whipped (Alpro) cream and tinned black cherries. This will knock the socks of anyone who says veganism is about deprivation!
