Background on Raw Vegan Food

Raw veganism is a diet that consists of unprocessed, raw plant foods, such as vegetables, fruits, legumes, nuts, seeds, and sprouted grains, and that have not been heated above 40°C. Foods cooked above this temperature can lose much of their nutritional value. Raw food recipes recommend the use of organic foods when possible and as a large percentage of food intake, in order to minimise cross-contamination from toxic pesticides and other harmful chemicals used in large-scale indutrial agriculture.

The health issues of a raw vegetable diet are thought to have been first studied towards the close of the 19th century and the raw food movement continued to gather momentum during the 20th century. But it is really only since the 1980s that raw foodism has become popularised by an explosion of recipe books and cookery videos.

Other than the higher nutritional value of uncooked food, fruits and vegetables are high in antioxidants which combat ageing and are anti-carcinogenic. Raw foods also contain bacteria and other micro-organisms that are beneficial to the digestive tract, whereas processed foods contain flavour enhancers, preservatives, colourants and other chemicals that can cause excitotoxicity. The use of cooking oils is also thought to be carcinogenic.

Some foods used in vegan raw food recipe may require lengthy advanced preparation. For example, rice and some other grains require sprouting to become digestible, or soaking overnight. Some more complex recipes also call for ingredients to be dehydrated and so it's not uncommon for raw vegan kitchens to have blenders, food processors, juicers, and dehydrators.
