Background on Breakfasts

The first meal or food of the day, usually served in the morning, the term 'breakfast' is rooted in the Jewish and Christian tradition of fasting overnight in order to honour their god. It is thought by many that, from a health perspective, breakfast is the most important meal of the day because it provides the energy and nutritional boost to get people through their day.

Every country has its own traditional and popular breakfast foods. One of the most famous worldwide is the English Breakfast, which consists of smokey bacon, sausages, black pudding, fried eggs, grilled or fried tomatoes and mushrooms, baked beans, toast (sometimes pan-fried) and crumpets. Many people see this as a cholesterol overload and opt for the lower calorie vegan version using veggie-sausage. Equally famous is the vegetarian-friendly European Continental Breakfast, which consists of bread (or toast) and jam/pastries/brioche/croissants, coffee/tea/hot chocolate, yoghurt, fresh fruit and fruit juice. This is a typical breakfast in France ('le petit déjeuner'). Sliced cold meat is sometimes added.

Around our home continent there are some famous vegetarian breakfasts, such as 'kosai' or 'funkaso' served with corn porridge (Nigeria), beignets, fresh fruit and baguettes (French-influenced Africa), and 'canjeero' or 'lahoh' pancakes (Somalia).

In Europe, many Danes enjoy rye bread, cheese, breakfast cereals, yoghurt and Danish pastries. Germanic nations favour bread with jam, and cereals with fresh or stewed fruit for 'Frühstück'. Many Italians favour a simple 'prima colazione' made up of coffee with milk and bread or rolls with butter and jam. Russians traditionally eat 'kashas' (porridge) made from buckwheat, oat or semolina, and flour pancakes. In Spain the traditional breakfast (known as 'desayuno') is 'chocolate con churros' - hot chocolate with Spanish-style fritters.

Chinese-style breakfasts include rice congee, 'mantou' (buns), 'youtiao' (doughnuts) and pancakes. In Japan, miso soup with rice and pickles is consumed. In Southern Indian breakfast is often ideal for vegans - 'dosa' (or some other bread) with 'sambar' (lentil stew) and chutney. Typical north Indian fare is also very well suited to vegetarians, being either 'paratha' or 'roti' served with a vegetable curry, beancurd and pickles. An usual option from the Philippines is 'champorado' - chocolate rice porridge.

Costa Ricans eat 'gallo pinto' - rice and beans sautéed in a pan with chile, onions and culantro. Hondurans eat homemade bread (traditionally banana or coconut bread) with beans, plantain, corn and tortillas. In Brazil, 'farofa', made from cassava root, is a popular breakfast staple.
