Background on Main Courses
A main course is the primary dish of a meal consisting of several courses. It is usually a savoury dish and very commonly during a 3 course dinner, it is served after the starter (appertiser, salad or soup) and followed by a dessert.
In North America they are often very confusingly referred to as 'entrées'. In French, these dishes are known as 'plats principaux', in Italian as 'portata principali', or 'platos principales' in Spanish. In some regions of the world the concept of a main course is not known. This is because all dishes are tradionally served and shared at the dinner table at the same time. In these instances, we list all substantial meals from these cuisines in this section.
It is thought that a well balanced meal should go some way to meeting the nutritional needs of diners. This is perhaps why the traditional 'meat and 2 veg' approach has proven to be so popular in western culture. Other common main dish types include curries, stews/casseroles, pies/flans, stir-fries, pasta, rice and noodle dishes.
In the vegan world, many dishes have been created that make use of vegetables cooked from their natural state. Of course, some traditional recipes are already suitable for vegetarians and sometimes vegan. But most often, recipes have been successfully altered to offer a vegan version using meat, dairy and egg substitutes. This means that vegans are able to enjoy dining without sacrificing their favourite meals.
