Background on Soups

Essentially a liquid food that is made by combining ingredients such as tofu and vegetables with stock, water or another liquid, soups are popular in nearly every cuisine the world over. They have been around for about 20,000 years and ever since man invented waterproof cooking containers. The English word comes from the French word 'soupe', an extension of the word 'sop' - to soak up liquid with a bread.

The range of soups is quite staggering. They can be both hot or cold, spicy or mild, savoury or sweet, clear or broth (like a stew). They can even be bought pre-made in a can, or in a packet in instant powder form. They are often served as a starter/appetiser but can also be used as a main course. Common classifications include broths, chowders, bouillon, consommés, purées and bisques.
